Resumo.
Aiming to evaluate the responses of “Fuyu” persimmon under different levels of nitrogen (N), aspects relatedto production and post-harvest quality, during the growing seasons 2007, 2008 and 2009 in an adultcommercial orchard, located in the municipality of Rio das Antas,SC was applied 00 - 30 - 60 – 120 - 180kg ha-1 of N. In pre-harvest we determined the number of fruits per plant, the rate of fruit premature dropping, yield and percentage of soft fruit during harvest. The fruits were harvested when they were at thecommercial maturity point, and the samples to be stored were exposed to 1-MCP, packed in polyethylenebag and stored 45 days at 0 ± 0.8 º C and relative humidity of 77 ± 7%. Analyses were done immediatelyafter harvest and seven days after the period of refrigerated storage, where it was measured the bark color, flesh firmness, content of total soluble solids, subjective firmness, the incidence of skin cracks, translucency, rot, large black spots and small black spots. The application of N resulted in increased in fruit setand productivity also affected the quality.
