Resumo.
The intestinal microbial has important role in human health and provide protection against some diseases, although sometimes it also can cause some other diseases. The probiotics have been seen as an important component of functional food industry, which exert a protective function on their host’s health. The amount of probiotic microorganisms surviving is essential for its functionality and it will depend on the strain of microorganism selected during the process of product’s manufacturing. In this context, the survival of probiotic bacteria Bifidobacterium present in fermented milk products, that showed in its information the presence of this bacteria, was evaluated in simulated gastric fluid, using chemical and microbiological parameters. It was possible to verify in samples analyzed the existence as well as the survival of this probiotic bacteria in simulated gastric fluid with pH3 for zero (0), five(5) and 15 minutes, through plate count of microbial population, Gram staining, catalase test and morphologicalaspects. According to results obtained, it is possible to conclude that the product analyzed is in agreement on withthe current Brazilian legislation and so can offer the benefits proposed.
